This morning I woke early and thought I would make something yummy for the office for morning tea, also our esteemed leader is heading back to Canada after a 3 week visit so it seemed fitting to send her off with some good Kiwi scones tickling her taste buds. I decided to create something with a difference so I created Lemon & Date Pinwheels – give them a go over the weekend, they came out winners.
In a pot put:
1 1/2 Cups Chopped Dates
1 Tablespoon Brown Sugar
2 tsp Butter
1/2 tsp Vanilla Essence
2 tsp Cocoa Powder
1 Cup Water
Bring to the boil and then simmer slowly stirring till a nice thick spreadable consistency, put aside to cool.
In a bowl put:
50g Soft Butter
3 Cups Sifted Flour
6 tsp Baking Powder
1 tsp Mixed Spice
1 Tablespoon Castor Sugar
Zest of 1 Lemon
Rub all this together till it is like large crumbs then add enough milk to bring it altogether without being to wet.
Put on a floured bench and push together till you have a nice dough (don’t overwork as the scones will be tough) then either roll out with your rolling pin or push out with your hands till a large rectangle is formed. Spread with the date mixture and roll up. Cut slices and put on a lined baking tray. Brush each scone with a little milk and sprinkle with a mix of caster sugar and mixed spice then put in a hot oven – 220 degrees – for about 10 mins, till nice and golden.
You can change the lemon for orange and you can change the mixed spice for cinnamon. I have lots of other fillings in my mind and will let you know them as time goes on.
